
Yum. Apple muffins are super yummy. And very healthy. I got some apples recently and I can't stop making these muffins!! They're just so good. If you want to try them, here's the recipe:
1 egg, beaten
3 tbsp. vegetable oil
1/2 cup milk
1/4 cup milled flax seed
1 cup whole wheat flour
1/2 cup all-purpose flour
1/2 cup of sugar
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1-1/2 cups finely chopped apples
Combine the egg, oil and milk in a large bowl. Add all dry ingredients and mix until just blended. Batter will be thick. Fold in apples. Fill well-greased muffin cups 2/3 full. Bake at 400 degrees for 20-22 minutes or until top springs back when touched. Makes 12 muffins.
I like to make it even more healthy sometimes by substituting 1/4 cup of sugar with 1/4 cup of honey. It tastes just as good.
